Notes From My Kitchen (and Beyond)

Recipe from Alison Roman’s Something From Nothing cookbook.

Added more kale and used coconut milk instead of yogurt 🌱

Hi folks,

I’ve been reading the memoir of Katherine Johnson, the NASA mathematician whose calculations helped put the first Americans in space. She was portrayed by Taraji P. Henson in the movie Hidden Figures.

In the memoir, Mrs. Johnson writes about her father, who owned a farm where the family grew much of what they ate. The recent surge in contaminated produce here in the US of A got me thinking about farms and growing your own food.

I’ve only managed to keep one cactus alive in my home, so I don’t know if farming is for me. My idea of foraging consists of walking down the grocery store aisle, which is exactly why hearing about contaminated produce concerns me.

Yes, I wash my fruits and vegetables before eating them. Yes, I know this isn’t the first time there’s been an outbreak of contaminated produce. Still, I’ve been thinking lately that I may need to pick up some seed packets and see if I can get some tomatoes and spinach growing.

These are interesting times we’re living in. I’ll keep you posted.

Have a great week!

Yaaas! Come over to the plant side of life :D! The recipe looks great :)

I totally understand about being wary of food and all the changes. I wish there were more grapes with seeds but its getting harder and harder to find. I am not growing full veg yet, but I am planning to. For now I am growing herbs and house plants.

Can’t wait to see how this journey unfolds. Oh and keeping a cactus alive is a great feat :D!

Ha! I’ve been on the plant side for decades. Wouldn’t have it any other way. Thats why the contaminated produce got me musing about planting. How wonderful that you grow herbs and house plants. Maybe one day I’ll get to that stage. The herbs not the house plants. I think I’ll stick with cacti for the foreseeable future! Have a great week :)

Hi there! Thanks for stopping by.
